Our Bunny Pops are the perfect treat this Easter season. Both cute and delicious, they help you remember what it was like hoping the Easter Bunny had visited. We make them in three delectable flavors - 70% dark chocolate, 45% milk chocolate, and caramelized white chocolate. Each one is more delicious than the last!
You'd think since the only ingredients are pure chocolate that this would be one of the easiest jobs in our kitchen, but to make them perfect, you need a light and careful hand. Each mold has to be gently heated and cleaned to remove any traces of cocoa butter from previous bunnies. This ensures your bunny arrives shiny and pretty.
Once the molds are ready, we hand-paint the bunny ears and tail delicately with white chocolate. Too little chocolate and you won't see the ears, too much and it bleeds into the main chocolate flavor. Then, we pipe tiny amounts of chocolate to fill the tiny, cute tails. While the white chocolate sets, we prepare the main chocolate into a gorgeous temper.
Now here comes the tricky part. Each mold must be filled quickly and methodically. We must get the chocolate to the edges of both ears while also touching the tail. If we are too slow, the chocolate will set up too fast and won't spread out in the molds nicely. Plus, the chocolate will not be shiny and smooth to our liking. Once the molds are filled, we gently tap them on the table to make sure the chocolate spreads to all the edges and removes any air bubbles.
After the chocolate sets, we place each bunny in a cellophane bag and tie it off with a raffia ribbon. These are the cutest, sweetest treats for the kid (or the kid-at-heart) in your life this Easter season!
